Christmas and all its festivities are now upon us, so whether you are entertaining or just kicking back with your loved ones try our Island Snow Cocktail with both the flavours of Christmas-orange and cinnamon along with Caribbean-coconut, rum and tequila in a creamy concoction. Yum.
Serves about 4 total time: 20 minutes
Ingredients:
100ml silver tequila
120ml freshly squuezed orange juice
1 tin coconut milk with the cream
200ml coconut rum
100ml Spiced Rum
20ml maple syrup
1 tsp fresh ground cinnamon
for garnish: sprigs of rosemary and fresh cranberries or logon berries
Directions:
Mix all ingredients together well with a hand or proper blender. Taste and add more syrup if you’d like more sweetness. Then garnish and enjoy the taste of a tropical Christmas.

I was recently reminded of something we used to make at summer camp called Bannock, an easy bread recipe that can be made on a fire using the last embers in a frying pan or wrapped around a stick.

I love how modern yet rustic this tart looks, it's an impressive dessert for any occasion, delicious served warm with a dollop of vanilla ice cream and best of all it's really easy to make. You can replace the fruit and herbs with anything that's in season and voilà!
